Ramadan Prep 2009 - What's for dinner?

During Ramadan we usually go straight ovo- lacto-vegetarian and exclude meat and fish from our diet and make a weak attempt to refrain for the rest of the year.

I'm working on my list for dinners which I'll continue adding to as I double check them against How To Eat To Live Books 1 and 2

I'll post pics and recipes as I make these dishes. Some haven't been made since last Ramadan (so sad).

One:
Navy Bean Soup - Garnished with cheese and chives
Sides: Tomato and Onion slices and farina bread

Two:
Curried zucchini made with coconut milk served with jasmine rice
Sides: Salad and cup of soup

Three:
Eggplant Parmesan Casserole
Side: Salad and cup of bean soup

Four:
Spinach Quiche
Side: Salad cup of bean soup

Five:
Vegetable Fried Rice
Vegetable Egg Rolls

Six
Vegetarian Enchalada
Black Beans and Rice

Seven
Veggie Sandwhiches
Guacamole and Chips

Help me! What do you have on tap?

Great minds think alike. I'm working on my Ramadan meals list this afternoon. I'm so excited about Ramadan this year! I'm starting a cleansing fast under the direction of my ND this week to prepare for the Ramadan fast. She's also a Muslim & will be helping me to continue my work out during the fast. I'll let you know what I come up with.

Try veggie patties ~ as a sandwich or the main dish with brown rice and a veggie. I basically shred up my veggies(yellow squash, zucchini, carrots, onions, peppers), season them well and add a couple eggs and a tablespoon or two of flour or breadcrumbs. Patty them and fry lightly in a little olive oil.

My family loves carrot burgers. Made the same as the patties. (carrots, onions, peppers,gralic)

Eggplant is very verstile. Try Eggplant Enchiladas. Layer fried eggplant slices with red enchilada sauce with garlic, onions,chiles, peppers and cheese topped with black olives. I had it at a baby shower last week. So, so good.

Squash Casserole ~ this is one good, because it has no cheese.
2 or 3 med-sized yellow squash, 1 onion, a can of cream of celery, 3 eggs, your regular seasonings plus a dash of cayenne pepper. Cook at 350 for about 40 min.

I put sea salt, black pepper, garlic powder, and onion powder in everything!

You could also use any veggie in quiche recipe.

Have you try spaghetti squash as an alternative to pasta?

Don't forget lentils--lentil chilli, loaf, patties.

Oh yeah, black bean soup and bb burritos. For the burritos, cook your beans, drain them and add a jar of salsa (or make your own), some cheese (just a little to make it less fattening), and season very well. I like to add cumin to mexican dishes.
